Chicken Skewers recipe
Juicy, succulent chicken skewers are so easy to make – just cube the chicken and veggies, season, and grill or broil.

Serves: 4 servings
Ingredients
- 1½ lb. boneless, skinless chicken breasts, cut into 2-inch pieces
- 2 red bell peppers, cut into 2-inch pieces
- 1 red onion, cut into 2-inch pieces
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 8 wooden skewers, soaked 30 minutes in water
Instructions
- Heat your grill or broiler to medium-high.
- Thread the chicken pieces and the vegetables on the prepared skewers
- Brush the skewers with the olive oil and sprinkle with the salt, pepper, garlic powder and thyme.
- Grill, turning occasionally, about 10 minutes or until chicken is cooked through. Or broil 4-5 minutes on each side.
