Chicken Skewers recipe

 Juicy, succulent chicken skewers are so easy to make – just cube the chicken and veggies, season, and grill or broil.

Serves: 4 servings
Ingredients
  • 1½ lb. boneless, skinless chicken breasts, cut into 2-inch pieces
  • 2 red bell peppers, cut into 2-inch pieces
  • 1 red onion, cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 8 wooden skewers, soaked 30 minutes in water
Instructions
  1. Heat your grill or broiler to medium-high.
  2. Thread the chicken pieces and the vegetables on the prepared skewers
  3. Brush the skewers with the olive oil and sprinkle with the salt, pepper, garlic powder and thyme.
  4. Grill, turning occasionally, about 10 minutes or until chicken is cooked through. Or broil 4-5 minutes on each side.
