Ingredients
  • Olive oil spray
  • 1 (5 lb.) whole chicken, giblets removed
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
Instructions
  1. Preheat oven to 425 degrees F. Line a roasting pan with foil and fit it with a roasting rack. Spray the roasting rack with olive oil spray.
  2. Rinse the chicken and pat dry.
  3. In a small bowl, mix the salt, pepper, thyme and garlic powder.
  4. Brush the outside of the chicken with olive oil. Sprinkle with the spices. Sprinkle some inside the chicken too.
  5. Place the chicken on the roasting rack. Roast the chicken for 1½ hours, or until internal temperature reaches 165 degrees F.
  6. Remove the chicken to a cutting board. Cover with foil and let rest for 20 minutes before slicing and serving.
