Ingredients
- Olive oil spray
- 1 (5 lb.) whole chicken, giblets removed
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
Instructions
- Preheat oven to 425 degrees F. Line a roasting pan with foil and fit it with a roasting rack. Spray the roasting rack with olive oil spray.
- Rinse the chicken and pat dry.
- In a small bowl, mix the salt, pepper, thyme and garlic powder.
- Brush the outside of the chicken with olive oil. Sprinkle with the spices. Sprinkle some inside the chicken too.
- Place the chicken on the roasting rack. Roast the chicken for 1½ hours, or until internal temperature reaches 165 degrees F.
- Remove the chicken to a cutting board. Cover with foil and let rest for 20 minutes before slicing and serving.
